- Over 200 standout labels from more than 40 breweries – Japan has 47 prefectures, each with its own brewing traditions, so attendees can expect a journey through different regional styles. Some breweries emphasize delicate aromas, others focus on rich umami flavors, and a few will surprise you with experimental blends. You’ll find everything from classic junmai sakes to creative modern takes.
- At least five new breweries – A handful of newcomers will make their Philippine debut. These are small, often family-owned breweries, offering rare or limited-edition bottles you won’t normally see outside Japan. It’s a chance to discover fresh perspectives and unique brewing philosophies.
- More nama (unpasteurized) sake – Nama sake is lively and unpasteurized, which gives it a fresh, fruity character and slightly effervescent feel. It can taste chaotic at first sip, but that’s part of the fun. Think of it as sake in its most energetic, playful form.
- More sparkling sake – Sparkling sake is lightly carbonated, aromatic, and refreshingly crisp. Perfect for those who enjoy a lighter, bubbly drink or for pairing with appetizers and cheeses.
- Premium warm sake – Warm sake, often served at precise temperatures, brings out deep, savory flavors. High-quality warm sake is smooth, comforting, and can reveal subtle notes that cold sake might mask. Done right, it’s like a warm hug in a glass.
- Food that’s even more exciting – Food-wise, Sake Manila is expanding too. Not just Japanese—there’ll be international pairings, artisanal cheeses, and creative dishes that invite experimentation. Chef Josef Teuschler, Culinary Director of Okada Manila, says it best: “Every dish has been specially created for SAKE MANILA—designed not just to complement the beverages, but to exist as part of this one-night-only experience.” Each bite is part of the journey, perfectly tuned to highlight the sake and shochu on offer, so you’re tasting and discovering on multiple levels all night long.
